Baked Salmon With Roasted Vegetables
Ingredients
4 salmon fillets
2 tbsp olive oil
2 cloves garlic, minced
1 lemon, sliced
1 lb baby potatoes, halved
1 cup cherry tomatoes
1 cup green beans
Salt and pepper to taste
Directions
Preheat oven to 400°F (200°C).
In a large bowl, toss baby potatoes, cherry tomatoes, and green beans with 1 tbsp olive oil, salt, and pepper. Spread on a baking sheet.
Place salmon fillets on another baking sheet. Drizzle with remaining olive oil, top with minced garlic, lemon slices, salt, and pepper.
